                             Step By Step Process


Ingredients:

For Tamarind Paste:

  • 1 lemon-sized ball of tamarind
  • 2 cups water
  • 2-3 tbsp sesame oil
  • 1 tsp mustard seeds
  • 1 tsp fenugreek seeds
  • 2 tbsp chana dal
  • 2 tbsp urad dal
  • 4-5 dried red chilies
  • 1/4 tsp asafoetida (hing)
  • A handful of curry leaves
  • 1/2 tsp turmeric powder
  • 1-2 tbsp jaggery (adjust to taste)
  • Salt to taste

For Rice:

  • 2 cups rice (preferably sona masoori or any short-grain rice)
  • 4 cups water
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 1-2 tbsp sesame oil

For Tempering:

  • 2-3 tbsp sesame oil
  • 1 tsp mustard seeds
  • 2 tbsp chana dal
  • 2 tbsp urad dal
  • 4-5 dried red chilies
  • 2 green chilies, slit
  • 1/4 tsp asafoetida (hing)
  • A handful of curry leaves
  • 1/4 cup peanuts (optional)

Instructions:

Preparing the Tamarind Paste:

  1. Soak the Tamarind: Soak the tamarind in 2 cups of hot water for about 15-20 minutes. Extract the juice and discard the pulp.
  2. Roast Fenugreek Seeds: Dry roast the fenugreek seeds until golden brown. Powder them and set aside.
  3. Make the Paste:
    • Heat sesame oil in a pan.
    • Add mustard seeds and let them splutter.
    • Add chana dal, urad dal, dried red chilies, and fry until the dals turn golden brown.
    • Add asafoetida, curry leaves, and turmeric powder. Sauté for a few seconds.
    • Pour in the tamarind extract and add salt and jaggery. Cook until the mixture thickens and the oil starts to separate from the paste.
    • Add the roasted fenugreek powder and mix well. Cook for another 2 minutes and set aside.

Preparing the Rice:

  1. Cook the Rice: Wash the rice thoroughly and cook it with 4 cups of water, turmeric powder, and salt. Ensure the rice grains are separate and not mushy.
  2. Cool the Rice: Once cooked, spread the rice on a large plate or tray to cool. Drizzle sesame oil over the rice to prevent sticking.

Combining:

  1. Mix Tamarind Paste with Rice: Once the rice is cooled, gently mix the tamarind paste into the rice, ensuring it coats every grain evenly.

Tempering:

  1. Prepare Tempering:
    • Heat sesame oil in a pan.
    • Add mustard seeds and let them splutter.
    • Add chana dal, urad dal, dried red chilies, green chilies, asafoetida, curry leaves, and peanuts. Fry until the dals turn golden brown.
  2. Add Tempering to Rice: Pour this tempering over the mixed rice and gently mix it in.

Final Touch:

  • Rest the Pulihora: Let the Pulihora rest for at least 30 minutes to an hour before serving. This helps the flavors to meld together beautifully.

Serving:
